GFR, my workflow involves adding new layers of detail one by one, not working segment per segment. Basically it looks like this:
Step 1 - "the grey blob", mother of all profiles

S2 - shape defined
S3 - Colour added, to have it look like a real a/c
S4 - All the little bits and pieces: prop ub, windows, instruments, guns, etc. I now have a brand new bird right out of the factory.
S5 - Weathering added to have it look more like a combat bird (too light here, but it's Doolittle's)
I'm thinking that your technique allows to focus on a specific point and hence not forget stuff. I often think to myself "I'll have to remember to do this/that when I create the relevent layer" and then forget (of course). But I like the "build-up", and I'm not sure I'd manage to work any other way. My "effect-by-effect" technique helps me keep coherent in the drawing style.
