This is my second ever profile using Photoshop (the first was a 109E, what else?) and I'm running into some ugly jagged lines when I create curves. I should also point out that I am self taught in PS.
So I guess my question is why or how is this happening? You will notice in the attached image that the perspex on the nose looks pretty smooth, I used fill path there, rather than stroke path - could that be it?
Any help is appreciated.
Also please disregard the horrendous looking carburetor ducts on the engines (the vents on top) - I have re-done them on a later version.

Basically draw the entire outline of your plane as a shape, create a layer filled completly with white on top of everything, make a selection from your shape and delete it from the white layer. Now you never have to worry about coloring in between the lines! In fact you have over draw things a little bit.

Actually I was able to get rid of the jagged linies by creating a new shape layer as you suggested. Procedure noted for future reference.
I find it easier to use the path selection tool to select the path, create a new group and then apply it as a vector mask to stick the underlying layers in, then if I need to tweak the original shape it is easier whilst retaining that nice crisp edge. And you don't have to worry about keep selecting stuff.
Other reason is the lack of anti aliasing on the line under the a/c which is creating the jaggies
